Ingredients:
- Potato / Aloo (peeled & chopped) - 2
- Cauliflower/ Gobi (Thoroughly cleaned florets) - 1 whole
- Oil - 7 tbsp
- Onion (medium) - 1
- Tomato - 1
- Ginger - 1 inch
- Garlic - 3 cloves
- Cumin seeds / Jeera - 1 tsp
- Chilli powder - 3/4 tsp
- Coriander powder - 1/2 tsp
- Cumin / Jeera powder - 1/4 tsp
- Aamchur / Dry mango powder - 1/2 tsp
- Garam masala powder - 1/2 tsp
- Turmeric powder - 1/4 tsp
- Kasuri methi - 1 tsp
- Coriander leaves - 2 tbsp

Preparation:
- Heat 5 tbsp oil in a kadai.
- Add thoroughly cleaned Cauliflower florets and chopped potatoes. Saute till they becomes golden brown. Take out and keep aside.
- Add 2 tbsp oil and jeera in the kadai. Saute well.
- Add freshly grated ginger and garlic. Saute well.
- Add chopped onion and saute till it becomes translucent.
- Add chopped tomato and saute till it becomes soft.
- Now add chilli powder, coriander powder, jeera powder, aamchur powder, garam masala powder and turmeric powder. Saute till the masala is cooked well.
- Add the fried cauliflower florets and potatoes to the cooked masala. Mix well.
- Add kasuri methi and coriander leaves. Mix well.
- Cover with a lid and cook for 2 - 3 minutes.
- Open the lid and mix gently.
- Transfer to a serving bowl. Enjoy Aloo Gobi Sabji with Chapathi / Phulka / Poori.
