Aloo palya (Potato stuffing)
Ingredients:
- Potatoes - 3
- Oil - 3 tbsp
- Onion - 1
- Mustard seeds - 1/2 tsp
- Cumin seeds - 1/2 tsp
- Ginger - 1 inch piece
- Green chillies - 3-4
- Curry leaves - 5-6
- Turmeric powder - 1/4 tsp
- Coriander leaves
- Salt - as per taste
Preparation:
- Boil potatoes in a pressure cooker with 4-5 whistles. Once the pressure cooker cools down, peel the potato skin. Mash the potatoes and keep it aside.
- In a kadai, heat the oil, splutter the mustard seeds and add cumin seeds.
- Add crushed ginger, green chillies, curry leaves and one chopped onion. Fry till the onion turns translucent and then add turmeric powder.
- Add the boiled potatoes, coriander and salt. Mix well. Aloo palya is ready for stuffing.
Bun:
Ingredients:
- Maida flour - 2 cups
- Milk (warm) - 1/2 cup
- Sugar - 2 tsp
- Yeast - 1 tsp
- Salt - 1/2 tsp
- Oil - 4 tbsp
- Butter - 1-2 tsp
Preparation:
- Add warm milk, sugar and yeast in a bowl, mix well. Cover and keep aside for 15 minutes.
- Add Maida, 1 tbsp oil, salt and yeast mixture to a mixing bowl, mix well. If required add milk gradually and make a sticky dough.
- Now take the dough on a flat surface, add little flour and oil, knead for 10 minutes till it becomes soft dough and does not stick to hands.
- Proofing: Tuck the dough, apply oil and keep it in a greased bowl for one and half hours, cover the bowl with a plate.
- Once proofing is done, knead the dough again and divide into equal portions. Roll the dough balls, stuff the Aloo palya inside and cover it with dough (just like holige/parata).
- Keep all the dough balls in a greased container/tray and cover it with a plate, keep aside for 30 minutes proofing.
- Brush the aloo bun dough with oil and milk.
- Place the container/tray on a small bowl or stand in the center of kadai. Cover with a plate.
- Bake for 40 minutes.
- Now take out the container or tray, apply butter on aloo buns, cover with wet cloth and leave for 10 minutes.
- Serve delicious Aloo bun with tea/coffee.
