Eggless Banana Choco Walnut Cake (with whole wheat flour and jaggery)

Ingredients:
- Ripe Banana - 2
- Whole wheat flour - 2 cups
- Jaggery - 1 cup
- Vanilla essence - 1 tsp
- Baking soda - 1/2 tsp
- Baking powder - 1 tsp
- Cocoa powder - 1/4 cup
- Cinnamon powder - 3/4 tsp
- Oil - 1/2 cup
- Milk - 1/2 cup
- Walnuts - 8 to 10 pieces
- Almonds - 6 pieces
- Raisin - 15 pieces
- Choco chips - 3 tbsp
Preparation:
- Grind the banana and jaggery, pour into a mixing bowl.
- Add oil, vanilla essence and mix.
- Seive the wheat flour, baking soda, baking powder, cocoa powder and cinnamon powder in the bowl. Mix using cut and fold method (Do not overmix).
- Add milk gradually and mix gently - cut & fold.
- Coat the chopped dry fruits and choco chip mixture with some wheat flour (to prevent settling at the bottom of the cake tin during baking). Add some mixture into the batter and mix once.
- Grease the cake tin with butter and place butter paper inside the tin.
- Pour the cake batter into the cake tin and sprinkle with remaining dry fruits and choco chips mixture. Gently tap the tin 2 to 3 times.
- Preheat the oven at 180°C in convection mode and place the baking tin inside.
- Bake at 180°C for 30 minutes. Take out from the oven.
- Let it cool completely. Unmould the cake from tin. Cut into slices.
- Enjoy Healthy and yummy cake.
