Ingredients:
- Wheat flour - 1 cup
- Gram flour / Besan - 1/2 cup
- Chiroti rava - 2 tbsp
- Ghee - 1/4 cup
- Jaggery - 1/2 cup
- Milk - 1/4 cup
- Baking powder - 1/2 tsp
- Cardamom/ elaichi powder - 1/4 tsp
- Salt - 2 pinch
Preparation:
Method 1 - using Oven:
- Add milk and jaggery in a mixer jar and blend it.
- Strain the milk - jaggery mixture.
- Add all the dry ingredients into a mixing bowl .i.e. wheat flour, gram flour, chiroti rava, baking powder, cardamom powder and salt. Mix well.
- Now add ghee and milk - jaggery mixture. Mix all together and make a soft dough.
- Take a small portion of dough, make a ball and flatten it slightly. Place it on a baking tray.
- Repeat the same procedure for remaining dough. Place them on the baking tray and ensure to leave a little space between the pieces.
- Add chopped almonds as topping on Nankhatai pieces.
- Preheat the oven at 180°C in convection mode. Bake at 180°C for 20 - 25 minutes.
- Take out the baking tray from the oven and cool them completely.
- Enjoy delicious Nankhatai with tea/coffee.
Method 2: using Kadai
- Repeat the steps 1 - 4 described above. Place the dough pieces topped with chopped almonds on a steel plate with a little space between each dough pieces.
- Now keep a small steel bowl / ring stand in the middle of the kadai and place the steel plate (containing nankhatai pieces) on the bowl.
- Cover it with a lid and bake for 20-25 minutes in low - medium flame.
- Take out the steel plate from the kadai and cool them completely.
Delicious Whole wheat Nankhatai is ready to be served.
