Malai Kofta

Malai kofta

Ingredients:

For Kofta:

  • Potato (boiled and mashed) - 1 cup
  • Paneer (grated) - 1 cup
  • Cumin / jeera powder - 1/4 tsp
  • Green chillies (finely chopped) - 1
  • Coriander leaves (finely chopped) - 2 tbsp
  • Maida - 2 tbsp
  • Raisins - 1 tbsp
  • Cashews (chopped)- 2 tbsp
  • Salt - 1/2 tsp
  • Oil (for deep frying)

For Gravy:

  • Oil - 4 tbsp
  • Onion (chopped) - 1 
  • Tomato (chopped) - 2
  • Ginger (crushed) - 1 inch
  • Garlic (crushed) - 3 cloves
  • Cashews - 10 pieces
  • Butter - 1 tbsp
  • Cloves - 3
  • Cinnamon - 1 inch
  • Bay leaf - 1
  • Chilli powder - 1 tsp
  • Turmeric powder - 1/4 tsp
  • Garam masala - 1/2 tsp
  • Cumin / jeera  powder - 1/4 tsp
  • Coriander powder - 3/4 tsp
  • Kasuri methi - 1 tsp
  • Malai / cream - 1/4 cup 
  • Sugar - 1/2 to 3/4 tsp
  • Salt - to taste
  • Water - 1/2 cup

Malai kofta


Preparation:

  1. Add the boiled and mashed potatoes, grated paneer to a mixing bowl.
  2. Add green chillies, coriander leaves, maida, cumin powder, raisins, cashews and salt. Mix all together and make a soft dough.
  3. Now make small round dough balls.
  4. Heat the oil in a kadai and deep fry kofta dough balls in a medium flame until golden brown. Keep the fried kofta balls aside.
  5. Heat 2 tbsp of oil in a kadai, add ginger garlic paste and saute.
  6. Add chopped onion and saute till golden brown. Add chopped tomatoes and saute till it becomes soft.
  7. Allow the onion-tomato mixture to cool down completely and transfer to a mixer grinder. Add cashews and grind into smooth paste.
  8. Add 2 tbsp oil and 1 tbsp butter to a kadai. Add cloves, cinnamon, bayleaf and saute.
  9. Add ground mixture to the kadai and mix.
  10. Add chilli powder, cumin powder, coriander powder, garam masala and turmeric powder. Mix well.
  11. Cover the lid and cook for 10 - 15 minutes till the oil separates from masala.
  12. Add 1/4 cup cream, 1/2 cup of water, salt as required, sugar and kasuri methi (crushed between palms). Mix well.
  13. Cook for 10 minutes until thick gravy consistency. 
  14. Arrange the fried kofta balls in a serving bowl and pour the gravy over it. Garnish with cream and coriander leaves.
  15. Serve the delicious Malai kofta with chapathi / roti / kulcha / naan / rice.
