Ingredients:
- Onion (medium size) - 1
- Beans (chopped) - 1 cup
- Carrot (chopped) - 1/2 cup
- Chow chow (chopped) - 1 cup
- Potato (chopped) - 1 cup
- Fresh Peas / frozen peas - 3/4 cup
- Coconut (freshly grated) - 1/2 cup
- Fried gram / Hurigadale - 2 tbsp
- Green chillies - 5
- Coriander leaves - few
- Cinnamon - 1 inch
- Clove - 3
- Ginger - 1 inch
- Turmeric powder - 1/4 tsp
- Cumin seeds / jeera - 1/4 tsp
- Oil - 2 tbsp
- Water
- Salt - as per taste
Preparation:
1. In a pressure cooker, add chopped beans, carrot , chow chow, potato, 1/2 tsp salt and sufficient water. Cook till 2 whistles.
2. In a mixer jar, add grated coconut, fried gram, green chillies, coriander leaves, cumin seeds, cinnamon, cloves, ginger and turmeric powder.
3. Grind the mixture by adding 1/4 cup of water until it becomes a thick masala paste.
4. Heat the oil in a kadai and add the chopped onion. Saute till it becomes translucent.
5. Add peas and continue to saute.
6. Now add all cooked vegetables along with the water in which they are cooked.
7. Add the ground masala paste and salt. Cook for 10 minutes till it acquires a semi thick gravy consistency.
8. Delicious Vegetable sagu is ready to serve with Chapathi/ Poori/ Dose.

Note:
1. Beetroot (optional) can be added.
2. Garlic (optional) can be added while grinding the masala paste.
