Sorekayi Halwa | Bottle gourd Halwa | Lauki ka Halwa with Jaggery & without Khoya

Ingredients:

(1 cup=180 ml)

  • Sorekayi | Bottle gourd | Lauki (grated) - 3 cups
  • Ghee - 3 tbsp
  • Milk - 1 1/2 cups
  • Jaggery - 3/4 cup
  • Cardamom / elaichi powder - 1/2 tsp
  • Cashews / Kaju (broken) 
  • Almonds / Badam

Preparation:

  1. Add 1 tbsp ghee to a kadai and add broken cashews. Roast till they turn golden brown. Take out the cashews from kadai and keep aside.
  2. Add 1 tbsp ghee to the same kadai and add grated bottle gourd. Saute for 5 - 7 minutes.
  3. Add milk and mix well. Cook on Low flame for 15 - 20 minutes. Saute in between till the milk gets absorbed and the bottle gourd is cooked completely. 
  4. Add crushed jaggery and mix well, jaggery melts. Cook on Low flame till the mixture thickens and does not stick to kadai.
  5. Add 1 tbsp ghee, cardamom powder and roasted cashews. Mix well.
  6. Transfer Sorekayi halwa to a bowl and garnish with some almonds.
  7. Yummilicious Sorekayi halwa is ready to savor hot or chilled.
