Ingredients:
(1 cup=180 ml)
- Sorekayi | Bottle gourd | Lauki (grated) - 3 cups
- Ghee - 3 tbsp
- Milk - 1 1/2 cups
- Jaggery - 3/4 cup
- Cardamom / elaichi powder - 1/2 tsp
- Cashews / Kaju (broken)
- Almonds / Badam

Preparation:
- Add 1 tbsp ghee to a kadai and add broken cashews. Roast till they turn golden brown. Take out the cashews from kadai and keep aside.
- Add 1 tbsp ghee to the same kadai and add grated bottle gourd. Saute for 5 - 7 minutes.
- Add milk and mix well. Cook on Low flame for 15 - 20 minutes. Saute in between till the milk gets absorbed and the bottle gourd is cooked completely.
- Add crushed jaggery and mix well, jaggery melts. Cook on Low flame till the mixture thickens and does not stick to kadai.
- Add 1 tbsp ghee, cardamom powder and roasted cashews. Mix well.
- Transfer Sorekayi halwa to a bowl and garnish with some almonds.
- Yummilicious Sorekayi halwa is ready to savor hot or chilled.
